[Chawan-mushi]
Recipe
1) Mix 1 egg with cooled bonito broth (1:4 ratio)
2) Add a pinch of salt, teaspoon of light soysauce, and a teaspoon of sweet sake (mirin).
3) Filter
4) Add chicken, shrimp, shitake mushroom and something seasonal (this time chestnuts)
5) Steam in a steamer for 25 minutes.

[Chawan-mushi]
Chawan-mushi can be found all over Japan but I am told that particularly in Kyoto it is one of the foods of choice for guests. Me being a guest at many students houses on this journey I have been delighted to have Chawan-mush just a few times.
[Uji Green Tea]
Uji tea is now a very famous green tea nationwide. It is said to be one of the origins of the Japanese traditional tea ceremony.
How was it?

It was good. It's always exciting to eat chawan-mushi because you never know what exactly is in it. You have to dig in your spoon and take a bite to find out. Still almost every bite is different.

Bitter as all good green teas are. I'm no connoseur of green tea but it tasted quite good to me.
