Fried Wild Boar and Shiitake Soft Persimmon
Fried Wild Boar and Shiitake
Description
1) Flavor wild boar with salt and pepper.
2) Fry until medium rare, then add shitake mushrooms.
3) Fry until the meat and shitake are soft and cooked completely.
Soft Persimmon
Description
1) Let persimmon mature on the tree until it is ready to droop off from the tree.
2) Eat the persimmon whole.
3) Spit out seeds

Worth Taking Note

Similar to other mountainous areas far from the ocean, northern Okayama City people have found other sources of protein. In the mountains here people have hunted wild-boar for centuries. Eliminating some in the winter also helps protect farmers vegetables which the boars like so much.

[Soft Persimmon]
It is said that Japan's ancestors may just have realized that the sun can remove the bitterness from persimmons. Also many people I have met show their appreciation towards the persimmon tree and the many bugs birds and animals by leaving a few persimmons up in the tree.


How was it?

The flavors of meat and shitake are perfect together. It wasn't too meaty or too mushroomy. It was just right.

[Soft Persimmon]
I basically sucked the persimmon fruit out of its skin. It was so soft and mushy that it almost melted right in my mouth Not too sweet, not even bitter at all.


Okayama Prefecture
Okayama Prefecture is blessed with both mountains and the ocean. Particularly in the mountains, hunting wild boar has been an important source ofprotein. On the other hand, villages along the Seto Insland Sea coast are much more dependent on fish for the same purposes.
