Sake Dumplings
Recipe
1) Boil water. Add malted rice and ferment for 12 to 13 hours at 23 degrees celcius.
2) Add flour and knead. Wait for one hour.
3) Add flour until the dough is about as hard as your earlobe. Cut and make into small balls.
4) Add sweet beans and wait for one hour.
5) Steam for 18-20 minutes

Memo
This is a treat that was enjoyed by the merchants that made their way back and forth between the silk making town of Uenohara and Edo (former Tokyo). The tradition goes back 400 years!
With the help of Mrs. Wachi a Sake dumpling pro, the first year students at Heiwa Middle School made these!


How was it?
Not too sweat, not too bland! Just right.
